This was the 2nd ever 'Trends in Food Science, Technology and Health' and focused on the topic of: 'Healthy Ingredients'
Dr Kerley's presentation was: 'Natural Products to help prevent and treat COVID-19'
There was over 25 participants from 14 countries in 4 continents including Spain, Portugal, Brazil, Finland, Netherlands, Nigeria, Macedonia, Germany, China, France, Peru, Iran and Dubai
The organisers were Professors Daniel Granato and Fabiana Andréa Hoffmann Sardá of the University of Limerick as well as Ana Novo Barros and Irene Gouvinhas of Universidade de Trás-os-Montes e Alto Douro.

-Kai Wang of Institute of Apicultural Research, Chinese Academy of Agricultural Science who spoke about Chinese honey
-Yong-Quan Xu of Tea Research Institute at the Chinese Academy of Agricultural Sciences
-Lillian Barros of Centro de Investigação de Montanha who spoke about Natural Food Ingredients for Food Applications
-Marcience Magnaniof Federal University of Paraíba who spoke about new generation probiotics.
Dr. Kerley's talk was so well received, the organisers invited him to deliver the main, keynote speech at the 2023 meeting!
